Preparation

- In a wide saucepan, warm a drizzle of extra-virgin olive oil over medium heat. Add the finely chopped shallot and cook gently until soft and translucent, without coloring.
- Add the Carnaroli rice and toast for 1 to 2 minutes, stirring so each grain is coated with oil and begins to turn slightly translucent at the edges.
- Start adding the hot minestrone one ladle at a time, stirring frequently. Allow each addition to be mostly absorbed before adding the next, maintaining a gentle simmer throughout.
- Continue cooking and stirring until the rice is al dente and the risotto becomes creamy and softly flowing, about 16 to 18 minutes. Adjust seasoning with sea salt if needed.
- Turn off the heat and let the risotto rest for 1 minute. Stir in the grated Parmigiano Reggiano until melted and smooth. If necessary, loosen with a spoonful of hot minestrone.
