Base recipe = 2 servings.
300 g fresh cotechino sausage
160 g dried lentils
60 g carrot, diced
60 g celery, diced
60 g onion, diced
20 g tomato paste
6 g garlic
500 g potatoes (for mash)
40 g butter
20 ml olive oil
120 ml milk
0.5 g nutmeg
Salt & black pepper
Method
Pierce the cotechino with a needle and simmer it gently in water for about 2 hours, keeping the liquid below a boil.
In a saucepan, sauté carrot, celery, onion, and garlic in olive oil until softened.
Add the lentils and tomato paste, season with salt and pepper, cover with hot broth, and simmer until tender.
Boil the potatoes until soft, then mash with butter, hot milk, salt, white pepper, and a touch of nutmeg.
Slice the cotechino and serve it over the lentils with mashed potatoes on the side.
Chef’s Note: Keep the cotechino at a gentle simmer rather than a hard boil. This preserves the texture of the sausage and prevents the casing from splitting too aggressively during cooking.
History & Tradition
Cotechino with lentils is one of Italy’s most symbolic dishes, traditionally served on the first day of the New Year.
The lentils, resembling small coins, have long represented wealth and prosperity, while the rich pork sausage symbolizes abundance and continuity.
This ritual dates back to Roman times and has endured through centuries as a culinary good-luck charm.
In Tuscany and across Northern Italy, serving cotechino on January 1st is a gesture of hope—wishing the year ahead to be generous, stable, and full.
