Crystallized Honey
A normal physical state in which glucose forms crystals. Crystallization is not proof of spoilage

Floral composition, glucose-to-fructose ratio, temperature and the presence of microscopic

Because honey is hygroscopic, lids and dispensing equipment should remain clean and dry.
Introducing water, wet utensils or high-moisture fresh ingredients can change the stability

Food-Safety Guidance
Infant botulism:
CDC guidance states that honey should not be fed to children younger than
12 months because honey can contain spores associated with infant botulism.
Plain honey is different from infused honey. Adding fresh herbs, garlic,
chiles, fruit or other high-moisture ingredients changes the microbiological environment.
