The Brussels sprout belongs to the southern-European wild-cabbage lineage that also produced cabbage, broccoli and cauliflower. Over centuries, growers selected forms that developed compact buds along the stem.

The crop became strongly associated with the Low Countries and the region around Brussels, Belgium, which gave the vegetable its modern name. Historical sources differ on the precise date of its development, but cultivation around Brussels is documented over several centuries.

Modern Production

Brussels sprouts became an important cool-climate crop in northern Europe and later in North America. In the United States, coastal California became a major production region because the cool maritime environment suits the crop.

Modern breeding has improved uniformity, yield, disease resistance and flavor while retaining the characteristic compact sprout structure.
