  1. Weigh precisely.Use a scale accurate to at least 0.1 g for small batches. Calculate dosage against total formula weight.
  2. Dry-preblend with sugar.Mix the pectin thoroughly with approximately 5–10 times its weight in sugar or another compatible dry ingredient.
  3. Disperse into warm liquid.Rain the premix into moving liquid while whisking. Avoid dumping pectin directly into a wet acidic base.
  4. Hydrate and activate.Apply the heat process specified by the supplier; many professional formulas bring the mixture to a boil after complete dispersion.
  5. Control acid and calcium.Measure when consistency matters. Add late-stage acid only as directed so the gel does not form before molding.
  6. Mold, cool and evaluate.Allow the gel to set fully before cutting. Record the brand, lot, dose, pH, solids and result for repeat production.

Lumps

Usually caused by adding dry pectin directly to liquid or insufficient agitation. Preblend with sugar and rain it in.
