Master Identity

The Grape Is Both Ingredient and Agricultural Knowledge

A grape can be eaten fresh, dried, fermented, distilled or used directly in cooking. Wine grapes, however, are selected for a different balance of sugar, acidity, skin, seeds, aroma precursors and phenolics than most table grapes.

Wine Grapes vs. Table Grapes

Wine grapes are commonly smaller, with higher skin-to-pulp ratio and concentrated sugars, acids and phenolic compounds. Table grapes are generally selected for larger berries, crisp texture, attractive clusters, thin skins and direct eating quality.

Tuscany Cuisine should preserve this distinction in the registry: a generic Grape knowledge identity can support culinary recipes, while named wine-grape cultivars become viticultural identities linked to regions and labels.

A Living Database, Not a Closed List

The OIV has reported roughly 10,000 known grapevine varieties globally. No practical web page can teach each one meaningfully in a single static list, so this page is designed as an expandable master atlas.

Wine Grapes in a Changing World

Vineyard geography is dynamic. Climate variability, water availability, disease pressure, economics, consumer demand and replanting decisions continually reshape where varieties are grown.

Vineyard Surface

OIV estimated global vineyard area at about 7.0 million hectares in 2025, the sixth consecutive annual contraction. Spain remained the largest vineyard country, followed by France and Italy among the largest European vineyard areas.

Vineyard-area figures include vines destined for wine, table grapes and dried grapes, so grape use must be considered when interpreting national totals.

Diversity vs. Concentration

OIV's global variety study found that only 13 varieties accounted for more than one-third of world vine area and 33 varieties accounted for half, even though thousands of grapevine varieties are known.

Italy and Portugal stand out for especially broad varietal diversity, which makes them important models for the Tuscany Cuisine philosophy of preserving regional culinary knowledge.

Identity rule: do not merge a wine grape with a wine bottle.
