Definition
Wine is produced through alcoholic fermentation of fresh grapes or grape must. In red-wine production, the juice normally ferments in contact with grape skins, and often seeds, so color compounds, tannins and other phenolic material can move from the solid grape material into the fermenting wine.

Fabrication / Winemaking
Grapes are harvested according to ripeness, acidity, sugar, phenolic development, vineyard conditions and the intended wine style.
Fruit may be destemmed and lightly crushed to release juice while preserving enough berry structure for controlled extraction.
Juice ferments with the skins. Yeast converts sugars into alcohol, carbon dioxide and secondary products while color and tannin are extracted.
Skins rise and form a cap. Pump-overs, punch-downs or other cellar techniques keep the cap wet and regulate extraction, temperature and microbial conditions.
After the desired extraction, free-run wine is separated and the remaining skins may be pressed. Press wine can be kept separate or blended according to style.
Many red wines undergo malolactic conversion, which changes sharper malic acidity into softer lactic acidity and can modify texture and aroma.
Wine may mature in stainless steel, concrete, large cask or smaller oak barrels. Vessel choice affects oxygen exposure, texture and aromatic development.
Depending on the wine, producers may blend, clarify, stabilize, filter and bottle before additional bottle aging or release.

Culinary Behavior
Brightens braises and sauces, balances fat and helps prevent a reduction from tasting flat.
Cherry, plum, berry, dried-fruit, floral, earthy, spicy and herbal notes can reinforce the flavor architecture of a dish.
Provides structure but can become harsh when a very tannic wine is reduced too aggressively.
Sweetness concentrates during reduction. Dry wine gives the chef more control when the sauce already contains sweet ingredients.
Vanilla, toast, smoke and spice from oak can become more pronounced as the liquid reduces.
Alcohol carries aroma and changes during cooking, but it should not be assumed to disappear completely in every preparation.

Add wine to a hot pan after searing to dissolve flavorful browned fond, then reduce before building the sauce.
Use wine as one component of the braising liquid, usually balanced with stock, aromatics and the natural juices of the food.
Reduce deliberately and taste often. Strong reduction amplifies acidity, tannin, sugar, oak and seasoning.

Use as part of a balanced marinade with aromatics, oil or other liquid components rather than treating wine as a complete marinade by itself.
